I’ve seen radicchio in the store occasionally – usually the variety that looks\u00a0like a very small red and white streaked cabbage. \u00a0 I had no real idea how to prepare it and so I generally avoided it. \u00a0 I shouldn’t have.<\/p>\n

Radicchio actually\u00a0comes in a variety of types. \u00a0Some \u00a0form a compact head while others have a loose structure more like a butterhead lettuce or even a tall romaine. \u00a0 It has a gently bitter\u00a0taste that adds a nice\u00a0flavor to mixed salads, nicely complemented by a vinaigrette dressing. \u00a0 I’ve been enjoying it with an orange basalmic dressing in salads tossed with fresh spinach, arugula and sugar snaps. \u00a0 It’s worth our effort to expose our tastebuds to a variety of flavors because\u00a0the compounds (flavonoids and carotenoids) that make our veggies so healthy excite\u00a0all our tastebuds – not just the ‘sweet’ ones.<\/p>\n

We’ll have loose heads of Verona type radicchio<\/strong> at the Athens Farmer’s Market this weekend, along with the delicious Hakurei (salad) turnips<\/strong>, some fresh Red Yugoslavian Butterhead lettuce<\/strong>, spring onions<\/strong>, green garlic<\/strong> and radishes<\/strong>. \u00a0Hope to see you there!<\/p>\n
